Need a gluten free pie recipe? We’ve got the best one! Thanks to one of our gluten free foodies in the office, we scarfed down this walnut pie, actually four of them, in a matter of minutes. Easy to make and fairly quick when it comes to making pies from scratch, we hope you love it as much as we did!
Chocolate Walnut Pie (Crustless)
Make one day ahead.
3 organic eggs
¾ cup organic sugar
½ cup nonGMO light corn syrup
½ cup grass feed butter
¼ cup nonGMO corn starch
1 cup chopped walnuts
1 6oz package of chocolate chips
Preheat oven to 350 degrees. In a small mixer bowl, at low speed, beat eggs, sugar, corn syrup, butter and corn starch until well blended. Stir in walnuts and chips. Pour mixture into a thoroughly greased pie pan. You may also pour into a pie shell. Bake 40-50 minutes or until puffy and set around the edges. Store in the refrigerator. Serve warm or cold with whipped cream.
And if you’re a bread lover you’ll appreciate the recipes in the book:
Our reinvention of this all-American staple has everything you want – and nothing you don’t – when it comes to your health.
In fact, on average, the breads featured in Better Breads have:
Fewer net carbs than a quarter of an apple
As much heart-healthy monounsaturated fat as 10 almonds
As much protein as an egg white, and
As much fiber as a serving of broccoli
You can’t expect these benefits from most other gluten-free bread recipes. Their super-high starch content will send your insulin levels soaring. And if you’ve been buying gluten-free bread at the store, you’ll be amazed how much better these fresh-baked breads taste… and you’ll NEVER have to worry about artificial ingredients, dough conditioners, unhealthy fats, or chemical preservatives.
